How to make it

  • For the Croutons:
  • Heat the butter and oil and fry the bread until golden. Drain on paper towels, Transfer to a sheet pan lined with parchment paper, top with cheese, broil in oven until bubbling.
  • For the Soup:
  • Reserve 1/3 of the watercress leaves
  • Place the rest of leaves and stalks in a pan with the pears and chicken or veggie stock. Season with salt & pepper.
  • Simmer for about 15-20 minutes. Reserving a few leaves for garnish add the remaining 1/3 of the leaves and immediately blend in a food processor until smooth.
  • Pour all the soup back into the pan and stir in the cream and lime juice. Put back on the stove and reheat stiring gently until warmed through.
  • To Serve. Pour soup in bowls. Garnish w/ Croutons and Watercress leaves.
