Ingredients

1 Tbsp. olive oil

1-1/2 lb. stew beef

1 tsp. minced garlic

1 (16-oz.) can navy beans

1 (4-oz.) can chopped mild green chilies

1-1/2 cups water

1 (10-oz.) can tomatoes with green chilies

1 medium onion, chopped

Directions

Preheat the oven to 350 degrees.

Heat olive oil in a large skillet over medium high heat until hot. Sauté beef and garlic in hot oil until beef is browned, about 6 minutes. Set aside.

Spoon the beans into 8 individual ban pots or a 2 qt. baking dish.

Spread green chilies over beans. Pour water and tomatoes with green chilies over the green chilies.

Sprinkle onion over tomatoes with green chilies. Top with sautéed beef. Bake covered, for 2 hours. Serve hot
