Baked Turkey Chimichangas Recipe
This is an easy, (somewhat) healthy alternative to traditional chimichangas. I use extra lean ground turkey and flax or sprouted grain tortillas to decrease the fat and increase the fibre while maintaining the taste.

Ingredients
  • 2 lbs extra lean ground turkey
  • 4 tbsp taco seasoning (or to taste)
  • 1 onion, chopped
  • 1 1/2 cups chunky salsa (I use Pace, medium or hot)
  • 1/2-3/4 cup shredded cheese
  • 9 - 9" tortillas

Directions
  1. Preheat oven to 475 F.
  2. Brown onion and turkey until turkey is no longer pink.
  3. Add taco seasoning during browning.
  4. Add salsa and heat thoroughly.
  5. Spray shallow baking pan with non-stick spray.
  6. Put approx. 1/9 of meat mixture in the centre of a tortilla and fold into a packet.
  7. Place on baking sheet with folds underneath.
  8. Sprinkle tops with shredded cheese.
  9. Bake 12-15 minutes, until heated and cheese melts and bubbles.
