Cheese Tortellini Salad

- 1 package fresh 3 cheese tortellini shopping list
- 1 tbsp olive oil shopping list
- 1 bag Italian blend lettuce shopping list
- 1/4 cup drained oil packed sun dried tomatoes, cut into thin strips shopping list
- 5 fresh basil leaves, sliced into thin strips shopping list
- vinaigrette: shopping list
- 1/4 cup drained oil packed sun dried tomatoes shopping list
- 4 tsp balsamic vinegar shopping list
- 4 tsp red wine vinegar shopping list
- 1 small clove garlic shopping list
- 1/3 cup extra virgin olive oil shopping list
- kosher salt and fresh ground pepper shopping list
How to make it
- for salad: cook pasta in large pot of boiling salted water, according to package instructions, about 10 minutes. drain and rinse under cold water until cool. Drizzle with the oil and toss to evenly coat to prevent sticking.
- Tear the Italian blend into bit size pieces and place in a large salad bowl. Add the tortellini and tomatoes. Toss with the vinaigrette, to taste, until coated. Garnish with basil.
- For vinaigrette: Place tomatoes, vinegars, and garlic in a blender or food processor and puree until smooth. gradually add the oil until emulsified. season with salt and pepper.
