How to make it

  • Preheat oven to 475
  • Whisk 1st 4 ingredients in a shallow dish
  • Mix breadcrumbs and cayenne in another shallow dish
  • Heat 2 baking sheets in oven until hot, then brush with olive oil
  • Dip fish, one strip at a time into butter mixture, then crumbs, turning to coat
  • Place 1 inch apart on hot sheets
  • Bake until golden brown, about 6 minutes per side
  • Serve with lemon and tarter sauce.
