Cajun Pecan Chicken

- 1 chicken (3 pounds) Cut Up (I use breasts........Much easier!!) shopping list
- 1-1/2 Cups - pecan halves shopping list
- 1/3 Cup - Unflavored bread Crumbs shopping list
- 3/4 Teaspoon - salt shopping list
- 3/4 Teaspoon - paprika shopping list
- 1/2 Teaspoon - oregano shopping list
- 1/2 Teaspoon - Ground white pepper shopping list
- 1/2 Teaspoon - Freshly ground pepper shopping list
- 1/4 Teaspoon - ground red pepper shopping list
- 1/2 Cup - buttermilk shopping list
- 2 Tablespoons - butter (Melted) shopping list
How to make it
- Preheat oven to 400'.
- Grease a 13" x 9" baking dish.
- In food processer/blender combine nuts, bread crumbs, salt, paprika, oregano and peppers. Process until nuts are chopped. (I usually finely chop the nuts myself and bypass the food processor step. Just mix ingredients well in a bowl!!). Transfer to a plastic bag.
- Pour buttermilk into a medium bowl; dip chicken into buttermilk, then add to the bag with pecan mixture and shake.
- Arrange in pan in a single layer; drizzle with butter.
- Bake 30 to 35 minutes.
- Enjoy!!
