Root Beer Cookies

- 1 cup packed dark brown sugar shopping list
- 4 oz canola oli margarine shopping list
- 1/2 stick unsalted butter, at room temperature shopping list
- 1 large egg shopping list
- 1 teaspoon vanilla shopping list
- 1/2 teaspoon baking soda shopping list
- 1/2 teaspoon salt shopping list
- 1 3/4 cups flour shopping list
- 2 teasoons root beer concentrate shopping list
- for icing: shopping list
- 2 cups confectioners' sugar shopping list
- 1/3 cup unsalted butter, at room temperature shopping list
- 3 tablespoons water shopping list
- 1 teaspoon root beer concentrate shopping list
How to make it
- For Cookies:
- In a large bowl, using a stand mixer or an electric hand mixer on medium speed, beat the brown sugar, margarine, butter and egg for several minutes unitl well blended and fluffy.
- Blend in vanilla, baking soda, salt, and flour in small increments, and the root beer cocentrate. The batter will be stiff.
- Cover and refridgerate for 1 hour.
- Preheat oven to 375 degrees.
- Line baking sheet with parchment paper.
- Drop the dough by the teaspoonfuls, spaced about 2 inches apart on sheets.
- Bake for 6 6 minutes.
- Transfer to wire rack to cool.
- For Icing:
- Combine sugar with butter and mix well.
- In cup combine the water with the root beer concentrate, then add to the sugar mixture and mix well. Spread on cooled cookies and wait 30 min. to serve.
- Enjoy!
