How to make it

  • For Cookies:
  • In a large bowl, using a stand mixer or an electric hand mixer on medium speed, beat the brown sugar, margarine, butter and egg for several minutes unitl well blended and fluffy.
  • Blend in vanilla, baking soda, salt, and flour in small increments, and the root beer cocentrate. The batter will be stiff.
  • Cover and refridgerate for 1 hour.
  • Preheat oven to 375 degrees.
  • Line baking sheet with parchment paper.
  • Drop the dough by the teaspoonfuls, spaced about 2 inches apart on sheets.
  • Bake for 6 6 minutes.
  • Transfer to wire rack to cool.
  • For Icing:
  • Combine sugar with butter and mix well.
  • In cup combine the water with the root beer concentrate, then add to the sugar mixture and mix well. Spread on cooled cookies and wait 30 min. to serve.
  • Enjoy!
