Sausage Pilaf with Lemon

- 1/2 lb. Italian sweet sausage; casings removed shopping list
- 2T. olive oil shopping list
- 2T. butter shopping list
- 1 med. onion, chopped shopping list
- 1 clove garlic, chopped shopping list
- 1/4c. green pepper, chopped shopping list
- 1/4c. red pepper, chopped shopping list
- 1/3c. celery, diced shopping list
- 1T. grated lemon zest shopping list
- 3T. fresh lemon juice shopping list
- 2c. chicken stock or broth shopping list
- 1c. long-grain rice shopping list
- 1/2c. grated parmesan cheese shopping list
- 1/4c. green onion tops, sliced on the bias shopping list
How to make it
- Saute sausage in oilve oil, breaking up with spoon & cooking until all traces of pink are gone.
- Drain sausage on paper toweling.
- Drain off all but 2T. of drippings from skillet.
- Add butter to drippings and saute the onion, garlic, peppers & celery.
- Return sausage to skillet.
- Add lemon juice and chicken stock to sausage & veggie mixture and bring to a boil.
- Stir in rice with fork.
- Lower heat, cover & simmer 20 min. or until all liquid is absorbed and the rice is tender.
- Stir in the parmesan.
- Garnish with green onion tops and lemon zest.

Delicious! I followed the recipe exactly except used a yellow pepper for the green. I love the lemon juice and zest, perfection!
