Blue Cheese Couscous Salad

- 1 cup dry medium granulated couscous shopping list
- 1 1/2 cup blue cheese, crumbled shopping list
- 1 small can corn kernels, drained shopping list
- 3 tsp vinegar (I use cider vinegar) shopping list
- 2T lemon juice shopping list
- 2 tomatoes, diced shopping list
- 4 shallots, chopped shopping list
- 1 small cucumber, sliced into very small straws shopping list
- 2T parsley shopping list
- 5T olive oil shopping list
- salt and pepper to taste shopping list
How to make it
- In a small bowl, mix olive oil, lemon juice, shallots, and parsley, set aside.
- in a small sauce pan, boil 1 cup of water. Add couscous, let sit for 5 minutes. Spread on a large flat plate and refrigerate for 15 minutes.
- Stir the dressing, blue cheese, tomato, corn and cucumber into the couscous.
- Refrigerate until cold
- Fluff with fork before serving.
