How to make it

  • In a small bowl, mix olive oil, lemon juice, shallots, and parsley, set aside.
  • in a small sauce pan, boil 1 cup of water. Add couscous, let sit for 5 minutes. Spread on a large flat plate and refrigerate for 15 minutes.
  • Stir the dressing, blue cheese, tomato, corn and cucumber into the couscous.
  • Refrigerate until cold
  • Fluff with fork before serving.
