Blue Cheese Couscous Salad Recipe
This is so good in the summer. It makes a nice change from lettuce and more lettuce. This is a very flexible salad: you can vary it with diced ham, olives, capers, or whatever you want. The dressing is also good with raspberry vinegar.

Ingredients
  • 1 cup dry medium granulated couscous
  • 1 1/2 cup blue cheese, crumbled
  • 1 small can corn kernels, drained
  • 3 tsp vinegar (I use cider vinegar)
  • 2T lemon juice
  • 2 tomatoes, diced
  • 4 shallots, chopped
  • 1 small cucumber, sliced into very small straws
  • 2T parsley
  • 5T olive oil
  • salt and pepper to taste

Directions
  1. In a small bowl, mix olive oil, lemon juice, shallots, and parsley, set aside.
  2. in a small sauce pan, boil 1 cup of water. Add couscous, let sit for 5 minutes. Spread on a large flat plate and refrigerate for 15 minutes.
  3. Stir the dressing, blue cheese, tomato, corn and cucumber into the couscous.
  4. Refrigerate until cold
  5. Fluff with fork before serving.
