Incredible Chevre Cheesecake

- Crust: shopping list
- 1 tablespoon butter shopping list
- 8 ounces ground breadsticks shopping list
- 1 cup butter shopping list
- 1/2 teaspoon salt shopping list
- Filling: shopping list
- 2 lbs. fresh chevre, room temperature shopping list
- 1 lb cream cheese, room temperature shopping list
- 3 medium eggs shopping list
- 1 tablespoon fresh basil, fresh rosemary, fresh thyme, fresh dill weed or any herb you enjoy. shopping list
- Receipe can be half. Use smaller springfoam pan. shopping list
How to make it
- For the crust:
- Coat a 9" springform pan with 1 tablespoon of butter.
- Mix ground breadsticks and butter. Reserve 2 tablespoons.
- Press mixture into the bottom and around the sides of the springform pan.
- Chill for 30 minutes.
- For the filling:
- Preheat oven to 375.
- Combine cheeses, egg and herbs.
- Beat with mixer at medium speed for about 10-15 minutes.
- Pour or spoon into the chilled crust.
- Reduce temperature to 325 and bake about 45 minutes or until browned and slightly puffed. Toothpick should come out pretty clean.
- Remove from oven and bring to room temperature.
- Release pan.
- Serve sliced into wedges with a sprig of fresh herbs.
- It's like being in the south of France again.
