How to make it

  • For the crust:
  • Coat a 9" springform pan with 1 tablespoon of butter.
  • Mix ground breadsticks and butter. Reserve 2 tablespoons.
  • Press mixture into the bottom and around the sides of the springform pan.
  • Chill for 30 minutes.
  • For the filling:
  • Preheat oven to 375.
  • Combine cheeses, egg and herbs.
  • Beat with mixer at medium speed for about 10-15 minutes.
  • Pour or spoon into the chilled crust.
  • Reduce temperature to 325 and bake about 45 minutes or until browned and slightly puffed. Toothpick should come out pretty clean.
  • Remove from oven and bring to room temperature.
  • Release pan.
  • Serve sliced into wedges with a sprig of fresh herbs.
  • It's like being in the south of France again.
