Ingredients
  • 8 large firm tomatoes
  • 5 cups arroz sazonado (recipe below)
  • 1/4 cup grated Parmesan cheese
  • 1-1/2 cups spicy tomato sauce (recipe below)
  • Arroz Sazonado:
  • 1 cup uncooked rice
  • 3 tablespoons vegetable oil
  • 2 cups water
  • 1-1/2 cups sliced chorizo, country-style link or kielbasa sausage
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 8 ounces tomato sauce
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 1/4 cup grated Parmesan cheese
  • Spicy Tomato Sauce:
  • 15 ounces canned tomato sauce
  • 1/2 teaspoon basil leaves
  • 1/2 teaspoon oregano leaves
  • 1/2 teaspoon season pepper OR lemon pepper
  • 1 teaspoon garlic salt

Directions
  1. Preheat oven to 350.
  2. Cut a thin slice from stem end of each tomato.
  3. Scoop out pulp then invert tomatoes to drain.
  4. Drain liquid from pulp.
  5. Chop pulp and add to rice then spoon mixture into tomato shells.
  6. Top with grated cheese then place in shallow baking dish and bake 25 minutes.
  7. In a heavy 2 quart saucepan brown rice in hot oil until golden stirring constantly.
  8. Add 1-3/4 cup water, sausage, onion, green pepper, tomato sauce, salt and chili powder.
  9. Heat to boiling stirring constantly.
  10. Cover and simmer over low heat 30 minutes.
  11. Stir with fork.
  12. Add 1/4 cup water if rice is too dry.
  13. Fluff rice with fork and stir in cheese.
  14. Make tomato sauce by combining all ingredients and simmer for 5 minutes.
  15. Pour tomato sauce over tomatoes and top with Parmesan cheese.

If it ever stops snowing here & I get to plant my tomatoes, this will be the first recipe I make with them. YUM!


They truly are fabulous. I know you will enjoy. I haven't gotten my tomatoes out yet either. Won't quit raining or scaring us with hail storms (last night) and tornado warnings (last night). Yikes.
