Ingredients
  • 4 tbsp. Red Curry Paste (see my red curry recipe)
  • 1 can of coconut milk
  • 2 lb of mix seafood wash and cleaned, shimp, mussel, clam, lobster and scallop or what ever desire
  • 1lb of fresh zucchini medium size sliced
  • 3-4 tbsp fish sauce or to taste
  • 3-4 tbsp of sugar or to taste
  • 2 cup of water
  • pinch of msg (optional)

Directions
  1. In a large pot, add coconut and curry paste, cook for about 10-15 mintues on medium low heat.
  2. Add sugar and stir.
  3. Add all seafood and water (do not stir) cover and cook for another 10 mintues.
  4. Add zucchini, msg, fish sauce and stir until well coat.
  5. Best serve hot....ENJOY
