Quick Breakfast Potatoes

- 1/2 leftover baked potato, cold (I leave the skin on, but scrub them down well before baking) shopping list
- 1/2 tsp. + 1/2 tsp. extra virgin olive oil shopping list
- 1/4 C. chopped onion shopping list
- 1/4 C. chopped bell peppers shopping list
- Note: I just use 1/2 C. frozen pepper and onion stir fry mix. shopping list
- dried thyme, to taste shopping list
- salt and pepper to taste shopping list
How to make it
- Chop potatoes into bite-sized pieces.
- Add 1/2 tsp. oil to a small non-stick pan.
- Over medium heat, cook onions and peppers until just tender.
- Push them to one side of the pan and add remaining oil.
- Turn heat to medium-high and add potatoes.
- Cook until potatoes are hot through and starting to brown, stirring occasionally.
- Mix with onion and pepper mixture and season to taste.
- Serve warm.
