Quick Breakfast Potatoes Recipe
This is a great use for leftover baked potatoes. I serve this with the Turkey Scramble for a hearty, warming breakfast or brunch. This could also be used as a great side dish at dinner. Once again, this recipe comes from a Women's Health magazine.

Ingredients
  • 1/2 leftover baked potato, cold (I leave the skin on, but scrub them down well before baking)
  • 1/2 tsp. + 1/2 tsp. extra virgin olive oil
  • 1/4 C. chopped onion
  • 1/4 C. chopped bell peppers
  • Note: I just use 1/2 C. frozen pepper and onion stir fry mix.
  • dried thyme, to taste
  • salt and pepper to taste

Directions
  1. Chop potatoes into bite-sized pieces.
  2. Add 1/2 tsp. oil to a small non-stick pan.
  3. Over medium heat, cook onions and peppers until just tender.
  4. Push them to one side of the pan and add remaining oil.
  5. Turn heat to medium-high and add potatoes.
  6. Cook until potatoes are hot through and starting to brown, stirring occasionally.
  7. Mix with onion and pepper mixture and season to taste.
  8. Serve warm.
