Rendangspiced Coconut Beef Recipe
This recipe is similar to the dish my daughter's Ex-mother -in -law from Jakarta makes. You can adjust the heat level. Everyone who tries it loves it. Serve over Jasmine rice.

Ingredients
  • 1 chopped onion
  • 3 cloves chopped garlic
  • 2 lbs. beef chuck, cut in 1 inch cubes
  • 2 Tbls. peanut oil
  • 1 teas. dried red chili
  • 1 piece fresh ginger [ size of thumb] chopped
  • 2 bay leaves
  • 1 stalk lemon grass pounded or 1 inch piece lemon peel
  • 2 lime leaves or 1 inch piece lime peel
  • 2 cans coconut milk
  • 1 teas. coriander
  • 1/2 teas. cumin
  • 1 teas. tumeric
  • 1Tbls. sweet soy sauce
  • 1 teas. sambal oelek [ ground chili paste]
  • 1/2 teas. salt

Directions
  1. Saute beef cubes in hot peanut oil for 5 mins.
  2. Add chopped onion and stir on low heat until onion softens
  3. If you have a food processor make a paste of garlic, chilis , and all the spices, a pestle and mortar work well also. If you have neither just chop finely.
  4. Add garlic, dried chilis and spices to pan with the beef and onions.
  5. Saute, stirring constantly for 5 mins. while spices release their flavours.
  6. Add 2 cans coconut milk. I use light coconut milk.
  7. Add 1 Tbls. sweet soy sauce.
  8. Add chopped ginger root
  9. Add salt
  10. Add cleaned and pounded stalk of lemon grass or grated lemon peel.
  11. Add lime leaves or grated lime peel.
  12. Add bay leaves
  13. Add sambal oelek if you like it Hot!
  14. Cover and simmer on low heat for 2 hrs. Sauce will thicken.
  15. Serve over steamed Jasmine rice
  16. This recipe is very adaptable. I sometimes use fresh chilis or just the sambal. I have also used lemon juice instead of lemon grass or peel.

I made something that was supposed to be like this last night from a pre-made spice mix. I vowed then and there to never use mixes or pastes again! This looks wonderful & I have almost everything I need to try again. Thanks for the post!
