Rendangspiced coconut beef

- 1 chopped onion shopping list
- 3 cloves chopped garlic shopping list
- 2 lbs. beef chuck, cut in 1 inch cubes shopping list
- 2 Tbls. peanut oil shopping list
- 1 teas. dried red chili shopping list
- 1 piece fresh ginger [ size of thumb] chopped shopping list
- 2 bay leaves shopping list
- 1 stalk lemon grass pounded or 1 inch piece lemon peel shopping list
- 2 lime leaves or 1 inch piece lime peel shopping list
- 2 cans coconut milk shopping list
- 1 teas. coriander shopping list
- 1/2 teas. cumin shopping list
- 1 teas. tumeric shopping list
- 1Tbls. sweet soy sauce shopping list
- 1 teas. sambal oelek [ ground chili paste] shopping list
- 1/2 teas. salt shopping list
How to make it
- Saute beef cubes in hot peanut oil for 5 mins.
- Add chopped onion and stir on low heat until onion softens
- If you have a food processor make a paste of garlic, chilis , and all the spices, a pestle and mortar work well also. If you have neither just chop finely.
- Add garlic, dried chilis and spices to pan with the beef and onions.
- Saute, stirring constantly for 5 mins. while spices release their flavours.
- Add 2 cans coconut milk. I use light coconut milk.
- Add 1 Tbls. sweet soy sauce.
- Add chopped ginger root
- Add salt
- Add cleaned and pounded stalk of lemon grass or grated lemon peel.
- Add lime leaves or grated lime peel.
- Add bay leaves
- Add sambal oelek if you like it Hot!
- Cover and simmer on low heat for 2 hrs. Sauce will thicken.
- Serve over steamed Jasmine rice
- This recipe is very adaptable. I sometimes use fresh chilis or just the sambal. I have also used lemon juice instead of lemon grass or peel.

I made something that was supposed to be like this last night from a pre-made spice mix. I vowed then and there to never use mixes or pastes again! This looks wonderful & I have almost everything I need to try again. Thanks for the post!
