Marinated Rosemary Chicken

- 1/2 c lemon juice, freshly squeezed shopping list
- 2 garlic cloves, crushed shopping list
- 1 tbsp fresh rosemary, chopped shopping list
- 1 tbsp olive oil shopping list
- 1/4 tsp freshly ground black pepper or more shopping list
- 1/4 tsp sea or kosher salt shopping list
- 2 lbs boneless skinless chicken breasts shopping list
How to make it
- In a large ziploc bag, place lemon juice, oil, garlic, rosemary, salt and pepper. Shake mixture and add chicken. Close bag and marinate for at least 4 hours in the refrigerator, or overnight is best. Turning bag every so often.
- Place chicken in the crockpot and pour marinade over. Cover and cook for 6 hours on Low, or until tender. If possible, baste occasionally with the marinade, cooking may take longer as opening frequently can lose heat.
- Broiling or Grilling: Place chicken on grill or in roasting pan. Heat marinade to boil first, remove from heat. Cook chicken under broiler/over high heat until seared and crispy, flipping to do both sides. Baste frequently. Then continue cooking with indirect heat till chicken is done.
- Note, if you run out of liquid, which you shouldn't in crockpot, baste with a little dry white wine or more lemon juice.
