Idaho Potato Galette

- 4 tbs unsalted butter shopping list
- 4 tbs peanut oil shopping list
- 1/2 cup white onion,finely chopped shopping list
- 3 pounds white potato (Idaho if you can),peeled and cut into 1/4 inch slices shopping list
- 4 fresh garlic cloves, minced shopping list
- 2 tsp. fresh rosemary, chopped shopping list
- 1 tsp. sea salt shopping list
- 1/4 cup Italian parsley, chopped shopping list
How to make it
- Divide the butter and oil between two skillets and heat over medium high heat until the butter melts.
- Divide the onion between the two skillets and saute until tender.
- Increase the heat and add the potatoes, garlic, rosemary, and salt divided between the two skillets. Cook until the potatoes are golden.
- Using a metal spatula, press and flatten the potaoes into a uniform thickness.
- Cover the skillets and reduce the heat to medium, and cook until the bottom of the potatoes are brown, about 10 minutes.
- Turn the entire galette over, and brown the other side. This will take about 15 minutes more.
- Slip the galettes onto plates, divide them and serve with parsley.
