How to make it

  • Divide the butter and oil between two skillets and heat over medium high heat until the butter melts.
  • Divide the onion between the two skillets and saute until tender.
  • Increase the heat and add the potatoes, garlic, rosemary, and salt divided between the two skillets. Cook until the potatoes are golden.
  • Using a metal spatula, press and flatten the potaoes into a uniform thickness.
  • Cover the skillets and reduce the heat to medium, and cook until the bottom of the potatoes are brown, about 10 minutes.
  • Turn the entire galette over, and brown the other side. This will take about 15 minutes more.
  • Slip the galettes onto plates, divide them and serve with parsley.
