How to make it

  • Spray a large non-stick skillet with cooking spray
  • Heat over medium until hot
  • Add spinach, mushrooms, salt and nutmeg; cook 2 - 3 minutes or until thoroughly heated, stirring occasionally
  • Remove mixture from skillet; set aside
  • Let skillet cool 1 minute. wipe skillet clean with a paper towel
  • Spray skillet again and return to medium heat
  • Pour half of the egg product into the skillet; cook 3 to 4 minutes or until set but still moist on top,
  • Lift edges occasionally to allow egg to flow to bottom of the skillet
  • Top one side of cooked egg with half of the spinach mixture and half of the cheese
  • with a pancake turner, loosen edge of omelet and fold half over filling
  • Cover skillet and cook 1 minute
  • Slide from skillet, sprinkle with pepper and cut in half to serve
  • Repeat with remaining ingredients
  • Calories 160 per serving
