Florentine Omelets

- 1 Pkg frozen spinach, thawed and squeezed dry shopping list
- 1 (4.5 oz) jar slice mushrooms shopping list
- 1/2 tsp salt shopping list
- 1/4 tsp nutmeg shopping list
- 2 (8 oz) cartons fat free refrigerated egg product shopping list
- 4 oz (1 C) shredded reduced fat swiss cheese shopping list
- Coarsley ground black pepper shopping list
How to make it
- Spray a large non-stick skillet with cooking spray
- Heat over medium until hot
- Add spinach, mushrooms, salt and nutmeg; cook 2 - 3 minutes or until thoroughly heated, stirring occasionally
- Remove mixture from skillet; set aside
- Let skillet cool 1 minute. wipe skillet clean with a paper towel
- Spray skillet again and return to medium heat
- Pour half of the egg product into the skillet; cook 3 to 4 minutes or until set but still moist on top,
- Lift edges occasionally to allow egg to flow to bottom of the skillet
- Top one side of cooked egg with half of the spinach mixture and half of the cheese
- with a pancake turner, loosen edge of omelet and fold half over filling
- Cover skillet and cook 1 minute
- Slide from skillet, sprinkle with pepper and cut in half to serve
- Repeat with remaining ingredients
- Calories 160 per serving
