Lemon-Basil Vegetables And Rice

- 1 1/2 Cup uncooked instant brown rice shopping list
- 1 1/2 C warer shopping list
- 1 Tbl oil shopping list
- 1 medium onion, chopped shopping list
- 1 (9 or 10 oz ) pkg niblets corn, thawed shopping list
- 1 (8 oz) pkd sliced fresh mushrooms shopping list
- 1 medium zucchini, cut in half lengthwise and sliced shopping list
- 1 red bell pepper, cut into small strips shopping list
- 1 1/2 tsp dried basil leaves shopping list
- 1/2 tsp grated lemon peel shopping list
- 1 Tbl lemon juice shopping list
How to make it
- Cook rice in water as directed on package, omitting margerine and salt
- Heat oil in a large non stick skillet over high heat until hot
- Add onion; cook and stir 2 to 3 mintues or until tender
- Reduce heat to medium high. Add corn, mushrooms, zucchini, bell pepper and basil
- Cook an additional 6 - 8 minutes or until vegetable or crisp tender, stirring occasionally
- Stir in cooked rice, lemon peel and lemon juice; mix well
- 4 (2 Cup) servings 320 calories each
