Ingredients
  • 1 1/2 Cup uncooked instant brown rice
  • 1 1/2 C warer
  • 1 Tbl oil
  • 1 medium onion, chopped
  • 1 (9 or 10 oz ) pkg niblets corn, thawed
  • 1 (8 oz) pkd sliced fresh mushrooms
  • 1 medium zucchini, cut in half lengthwise and sliced
  • 1 red bell pepper, cut into small strips
  • 1 1/2 tsp dried basil leaves
  • 1/2 tsp grated lemon peel
  • 1 Tbl lemon juice

Directions
  1. Cook rice in water as directed on package, omitting margerine and salt
  2. Heat oil in a large non stick skillet over high heat until hot
  3. Add onion; cook and stir 2 to 3 mintues or until tender
  4. Reduce heat to medium high. Add corn, mushrooms, zucchini, bell pepper and basil
  5. Cook an additional 6 - 8 minutes or until vegetable or crisp tender, stirring occasionally
  6. Stir in cooked rice, lemon peel and lemon juice; mix well
  7. 4 (2 Cup) servings 320 calories each
