Super Simple Salmon and Brown Rice with Tomatoes and Mushrooms

- 1 or 2 salmon filets (less than 1 inch thick and no larger than can fit into a saucepan) shopping list
- 1 package of Uncle Ben's Ready to Serve brown rice shopping list
- 1 tomato shopping list
- 1/2 package of mushrooms (any type you like) shopping list
- 1/4 cup water shopping list
- tarragon shopping list
- salt and pepper shopping list
How to make it
- Put rice in to 3 qt saucepan.
- Mix in tomatoes and mushrooms.
- Add water and heat on low-medium (you want the water to simmer).
- Place the salmon filets on top of the rice.
- Season with salt and pepper (to taste) and sprinkle tarragon on top.
- Cover and cook for 5 - 10 minutes, or until fish "flakes" when a fork is inserted.
- Enjoy!
