Eat - Air Inspired Tangerine Soy Fry Recipe
Tweaked from Eat Air, a vegan food blog, this is a delicious, tangy-sweet meal for 2 when served with some nutty brown rice, or as a delicious lunch in it's own bowl!

Ingredients
  • 70 grams soy slices (like So Soya brand)
  • Hot water
  • 2 tbsp + 1 tsp cornstarch, divided
  • 1/2 cup vegetable broth
  • 1 1/2 tbsp low sodium soy sauce
  • 1/2 tbsp maple syrup
  • 1/4 cup tangerine juice
  • 1 tbsp tangerine zest
  • 1/2 lb broccoli, chopped
  • 1 tbsp minced ginger
  • 3 cloves garlic, minced
  • 1/4 tsp crushed red pepper flakes

Directions
  1. Soak soy slices in hot water for 10 - 15 minutes.
  2. Drain excess liquid.
  3. Coat the soy with 2 Tbs. cornstarch and set aside.
  4. Mix together the rest of the cornstarch with the broth, soy sauce, maple syrup, and tangerine juice, set aside.
  5. Heat a wok over medium-high heat and stir-fry the broccoli in water or vegetable broth until tender-crisp.
  6. Remove the broccoli from the pan, add a spray of PAM (or similar) and add soy slices.
  7. Cook for several minutes until crispy, then add the ginger, garlic, red pepper and tangerine zest.
  8. Cook another minute.
  9. Add the broccoli back to the pan, then add the sauce and cook just until the sauce is thickened, about 30 seconds.
