Eat - Air Inspired Tangerine Soy Fry

- 70 grams soy slices (like So Soya brand) shopping list
- hot water shopping list
- 2 tbsp + 1 tsp cornstarch, divided shopping list
- 1/2 cup vegetable broth shopping list
- 1 1/2 tbsp low sodium soy sauce shopping list
- 1/2 tbsp maple syrup shopping list
- 1/4 cup tangerine juice shopping list
- 1 tbsp tangerine zest shopping list
- 1/2 lb broccoli, chopped shopping list
- 1 tbsp minced ginger shopping list
- 3 cloves garlic, minced shopping list
- 1/4 tsp crushed red pepper flakes shopping list
How to make it
- Soak soy slices in hot water for 10 - 15 minutes.
- Drain excess liquid.
- Coat the soy with 2 Tbs. cornstarch and set aside.
- Mix together the rest of the cornstarch with the broth, soy sauce, maple syrup, and tangerine juice, set aside.
- Heat a wok over medium-high heat and stir-fry the broccoli in water or vegetable broth until tender-crisp.
- Remove the broccoli from the pan, add a spray of PAM (or similar) and add soy slices.
- Cook for several minutes until crispy, then add the ginger, garlic, red pepper and tangerine zest.
- Cook another minute.
- Add the broccoli back to the pan, then add the sauce and cook just until the sauce is thickened, about 30 seconds.
