How to make it

  • Soak soy slices in hot water for 10 - 15 minutes.
  • Drain excess liquid.
  • Coat the soy with 2 Tbs. cornstarch and set aside.
  • Mix together the rest of the cornstarch with the broth, soy sauce, maple syrup, and tangerine juice, set aside.
  • Heat a wok over medium-high heat and stir-fry the broccoli in water or vegetable broth until tender-crisp.
  • Remove the broccoli from the pan, add a spray of PAM (or similar) and add soy slices.
  • Cook for several minutes until crispy, then add the ginger, garlic, red pepper and tangerine zest.
  • Cook another minute.
  • Add the broccoli back to the pan, then add the sauce and cook just until the sauce is thickened, about 30 seconds.
