Vegetarian Sloppy Joes Recipe
I love the concept of Sloppy Joes, and this is my own vegetarian version of it. I serve it with Carrot Raisin Salad.

Ingredients
  • 2 cans beans, whatever kind you like best. I use Cannellini or black beans
  • 1 small onion
  • 1 tablespoon olive oil
  • 2 tablespoons flour
  • 8 ounces tomato sauce, use canned if you like
  • 2/3 cup catsup
  • 6 sandwich rolls

Directions
  1. Drain the beans and rinse well.
  2. Chop the onion into small pieces.
  3. In oil, saute the onions, and add the beans to the skillet when the onions are somewhat soft. Mash the beans a little as they warm.
  4. Stir in the flour and be sure it's thoroughly incorporated.
  5. Add the tomato sauce and catsup and heat through.
  6. Serve on Sandwich rolls.
  7. You might want to wear a bib!

I see a bib would be needed, but then I need one for regular sloppy joes anyway. Unique use of beans, I was expecting tofu crumbles. Thanks for the post.
