How to make it

  • Preheat oven to 350.
  • Cook parsnips in boiling salted water 30 minutes or until tender. Plunge into cold water then peel and remove woody center fibers.
  • Mash or blend with eggs, salt, honey and nutmeg.
  • Sauté chopped green pepper in butter then add raisins and stir into parsnip mixture.
  • Bake in buttered casserole dish 15 minutes.
  • Also good baked in the roasting pan with pork.
