Parsnips Baked with Raisins

- 6 medium sized parsnips shopping list
- 1 teaspoon salt shopping list
- 1/4 teaspoon grated nutmeg shopping list
- 2 tablespoons honey shopping list
- 4 eggs lightly beaten shopping list
- 1/2 cup chopped green pepper shopping list
- 4 tablespoons butter shopping list
- 1/3 cup raisins shopping list
How to make it
- Preheat oven to 350.
- Cook parsnips in boiling salted water 30 minutes or until tender. Plunge into cold water then peel and remove woody center fibers.
- Mash or blend with eggs, salt, honey and nutmeg.
- Sauté chopped green pepper in butter then add raisins and stir into parsnip mixture.
- Bake in buttered casserole dish 15 minutes.
- Also good baked in the roasting pan with pork.
