Ingredients
  • 1 stick butter
  • 1 cup sugar
  • 1 cup brown sugar
  • 3 eggs
  • 2 cups persimmons (pulp)
  • 2 cups flour
  • 1/2 tsp. soda
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 tsp. cinnamon
  • 1 3/4 cups milk
  • 1/2 cup pecans ( chopped)
  • 1/2 cup coconut
  • 1/2 cup raisins

Directions
  1. Cream butter and sugar together. Add eggs, one at a time, mixing thoroughly. Add persimmon pulp. Mix dry ingredients and add alternately with milk. Add pecans,coconut, and raisins.(mix). Bake in one large or two small casseroles for one hour or until done in a 325 degree oven.

I know I would love this but where in the world could I find the persimmons? I grew up in Arkansas and we had a persimmon tree and I love them.

Man, the persimmons at my dad's place are to acidic/sour to eat even after a hard frost!


Waterlily - wait a while longer...they will eventually undergo bletting and the astringency will disappear. I've eaten overwintering persimmons in April...though the animals make sure not many are available by then!
