persimmon pudding is one of those dishes you have heard of but very seldom see. this one is good taken with spiced or spiked coffee.

I know I would love this but where in the world could I find the persimmons? I grew up in Arkansas and we had a persimmon tree and I love them.

Waterlily - wait a while longer...they will eventually undergo bletting and the astringency will disappear. I've eaten overwintering persimmons in April...though the animals make sure not many are available by then!
