You know me, always on a quest for something new for 'pancake sunday'

Ingredients
  • Waffles
  • 3 cups flour
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoons baking soda
  • 4 tablespoons melted butter
  • 1/2 teaspoon salt
  • 4 eggs
  • 2 cups buttermilk
  • Filling
  • 12 oz. cream cheese (softened)
  • 1/2 cup confectioners sugar
  • 1 teaspoon orange extract
  • .
  • 4 peaches, peeled and sliced

Directions
  1. Waffles - Combine all ingredients. Mix until smooth
  2. Filling - Using hand mixer combine all filling ingredients, except peaches, until smooth.
  3. Assembly - Place one waffle each on 4 plates - spread a couple T of filling on each waffle and 1/4 of the peaches. Top with a second waffle and another dollop of filling and a squirt of your favorite syrup. Serve immediately.
