Pork Chops With Apples And Parsnips Recipe
A different way to cook chops. Parsnips and apples are a great combination.

Ingredients
  • 4 pork chops about 1/2" thick (about a pound)
  • 3 medium parsnips, cut crosswise into 1/2" rounds
  • 1 medium onion, sliced
  • 1/2 C chicken broth
  • 2 tsp dry mustard
  • 1/4 tsp salt
  • 1/4 tsp ground allspice
  • 1/8 tsppepper
  • 1 medium apple, cut into 1/4 " wedges
  • 2 T chopped fresh parsley (use dried to taste)

Directions
  1. Cook chops in a large non-stick skillet over medium, turning once, until brown
  2. Place parsnips and onion on pork.
  3. Mix broth, mustard, salt, allspice and pepper; pour over vegetables and pork
  4. Heat to boiling, reduce heat
  5. Cover and simmer about 30 minutes or until chops are just tender
  6. Arrange apple on vegetables
  7. Cover and simmer about 3 minutes or until apples is tender
  8. Sprinkle with parsley and serve
