Pork Chops with Apples and Parsnips

- 4 pork chops about 1/2" thick (about a pound) shopping list
- 3 medium parsnips, cut crosswise into 1/2" rounds shopping list
- 1 medium onion, sliced shopping list
- 1/2 C chicken broth shopping list
- 2 tsp dry mustard shopping list
- 1/4 tsp salt shopping list
- 1/4 tsp ground allspice shopping list
- 1/8 tsppepper shopping list
- 1 medium apple, cut into 1/4 " wedges shopping list
- 2 T chopped fresh parsley (use dried to taste) shopping list
How to make it
- Cook chops in a large non-stick skillet over medium, turning once, until brown
- Place parsnips and onion on pork.
- Mix broth, mustard, salt, allspice and pepper; pour over vegetables and pork
- Heat to boiling, reduce heat
- Cover and simmer about 30 minutes or until chops are just tender
- Arrange apple on vegetables
- Cover and simmer about 3 minutes or until apples is tender
- Sprinkle with parsley and serve
