How to make it

  • Combine the onion, 1 cup water, tomato, olive oil and salt in a large saucepan.
  • Bring to a boil, lower the hear and simmer, covered, for about an hour, or until the onions are meltingly soft.
  • Optionally, puree with an immersion blender. This gives the sauce a great orangey color and a richer texture, but it's not necessary - the sauce is great chunky as well!
  • Serve over pasta and sprinkle with grated Parmigiano-Reggiano cheese.

    Thanks linebb and kristopher! Yeah - San Marzano rocks - this is one case where you can definitely taste the difference in branding! I love how easy this recipe is - toss everything in the pot and I've got an hour to get my boys cleaned up and setting the table for dinner while I get the pasta boiling - not quite the 30 minute drill we usually have, but for those evenings where there's a tad more time this is great! And, it holds in the fridge (or freezes) beautifully, so I always make way more than we can eat at one sitting...
