How to make it

  • Combine egg and steak sauce in a shallow dish.
  • Mix crushed crackers with seasonings in another shallow dish.
  • Cut tenderloin crosswise into ½” thick slices. Pound slices to ¼” thickness. Cut each slice in 4 pieces.
  • Dip each piece into egg mixture, then cracker crumbs, turning to coat.
  • Heat 1 T. of oil in a large nonstick skillet over med heat until hot. Add half of pork and cook 4 to 5 min per side or until browned.
  • Repeat with remaining oil and pork.
  • Serve with ranch, bbq, sweet hot mustard or sweet and sour sauce.
