Ingredients
  • 1 lb pork tenderloin
  • 2 eggs, beaten
  • 2 T. A1 steak sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp fresh ground pepper
  • 1 ½ C. finely crushed buttery crackers
  • 2 T. olive oil
  • `

Directions
  1. Combine egg and steak sauce in a shallow dish.
  2. Mix crushed crackers with seasonings in another shallow dish.
  3. Cut tenderloin crosswise into ½” thick slices. Pound slices to ¼” thickness. Cut each slice in 4 pieces.
  4. Dip each piece into egg mixture, then cracker crumbs, turning to coat.
  5. Heat 1 T. of oil in a large nonstick skillet over med heat until hot. Add half of pork and cook 4 to 5 min per side or until browned.
  6. Repeat with remaining oil and pork.
  7. Serve with ranch, bbq, sweet hot mustard or sweet and sour sauce.
