How to make it

  • Preheat oven to 400.
  • Season the chicken with salt and pepper. In a wide dutch oven over med. high heat, add the oil and brown the chicken, 2 to 3 mins. per side and transfer to a plate.
  • Add the garlic to the pan and cook, stirring, for 1 min. Remove the pan from the heat. Add the chicken, rosemary, thyme and lemon zest and stir to combine. Cover the pan, transfer to the oven and roast for 20 mins. Baste the chicken with the accumulted juices. Continue roasting, uncovered, until the chicken is cooked through and the juices run clear when the meat is pierced with a knife, about 30 minutes more.
  • Transfer the chicken to a platter; leave the garlic in the pan. cover the chicken loosely with foil.
  • Set the pan over med. heat and mash the garlic with the back of a spoon. Add the wine and cook for 3 mins. add the stock and cook, stirring occasionally, until slightly thickened, about 5 mins. whisk in the butter fa few pieces at a time. Season with salt and pepper. transfer the sauce to a sauceboat. Serve chicken and sauce right away.

    This was a home run! What a wonderful meal. This is the best chicken I have ever eaten. This will be on our family dinner menu! I made some adjustments, ie a little more wine and chicken stock and butter! I threw into the oven red potatoes to bake. I also put the rest of my garlic in a pie pan with EVOO and roasted it. We had some of the "gravy" over the potato-YUMMY. Thanks again!

    Hi! Denver here!! I have looked at many 40 garlic clove chicken recipes, and I think yours looks the best! It is on the menu tonight! Got a new dutch oven for Christmas and looking for ways to put it to good use! Thanks for sharing this recipe. Rosemary
