How to make it

  • wash, cooked, peel potatoes,
  • cut into slices
  • make a creamy sauce of
  • lemon juice, oil, sherry, salt, pepper, cayenne pepper.
  • pour over potatoes
  • leave to let the aroma soak through the potatoes
  • peel shallot, chop finely.
  • slice in half avocado, remove pit, peel, sprinkle with lemon immediately to keep from getting brown.
  • cut avocado halves in three sections, then into wedges, not too thin.
  • add to potatoes
  • wash Rucola, remove the hard end of the stem, cut into small strips, saving a handful for later decoration
  • add shrimp and rucola to patatoes, mixing well.
  • check seasoning
  • decorate with remaining rucola - serve!
  • Voilá! a glass of chilled white wine will go well.
