This is a sweetish Marmelade. But if you like yours English-style, like I do, reduce the sugar. This also works nicely with any other citrus fruit, even grapefruit.

Ingredients
  • 1 large navel orange, unpeeled
  • 1 cup (250 mL) sugar

Directions
  1. Cut orange into chunks. In a food processor, process orange chunks, using an on/off motion, until coarsely chopped. There should be about 1 1/2 cups (375 mL) chopped orange.
  2. Place chopped orange in a microwave-safe bowl. Stir in sugar.
  3. Microwave on high for 6 - 8 minutes, stirring every 2 minutes, until mixture is thick and translucent.
  4. Serve warm or at room temperature.
  5. May be refrigerated for up to 2 weeks.
  6. Makes 1 1/4 cups (300 mL).

Hi Delia! This is a perfect marmalade for my family and I. Well, actually for me ;) I am allergic to pectin and it is found in almost all jams, jellies and fruit spreads. Thank you so very much for sharing your recipe. Of course I'm giving you "5" forks all the way!
