Chicken with Hoisin sauce

- 1lb. boneless chicken breasts,cut into 1" cubes shopping list
- 1Tbs. soy sauce shopping list
- 1Tbs sugar shopping list
- 1Tbs. cornstarch shopping list
- 1/2 can water chestnuts,sliced shopping list
- 2Tbs hoisin sauce shopping list
- 1c mushrooms,sliced shopping list
- 1/4lb. pea pods shopping list
- 1 red or green pepper,cut into 1" cubes shopping list
- 1/2c cashews,salt rinsed off shopping list
- 2-3Tbs peanut or canola oil shopping list
How to make it
- Combine soy sauce,sugar and cornstarch and marinate chicken cubes for at least 1/2hr. in the frig. Heat wok or fry pan and and add 1-2Tbs. oil. Stir fry chicken till it turns white. Remove. Add 1Tbs oil to wok.Stir fry vegetables until slightly cooked(still crisp) Add reserved chicken,cahews and hoisin sauce. Stir until heated through. Serve with white or fried rice.

I stir fry often in the winter, but usually without much planning in the sauce department. This recipe with hoisin sauce sounds very good. I'll probably add some bok choy as I always do.
