Ingredients
  • 1 1/2 cups ketchup (good quality ketchup, I use heinz)
  • 1/2 to 1 cup brown sugar ( to your taste, can use less)
  • 2 pounds ground chuck
  • 1 slice bread, broken up into small pieces
  • 1/2 cup chopped yellow onion diced (can use less)
  • 1/2 cup bell pepper diced (can use less)
  • 1/2 cup green onion (can use less)
  • 1 egg beaten
  • black pepper (to your taste)
  • garlic powder (to your taste)
  • couple of dashes of worcestershire sauce
  • THIS IS NOT MY PICTURE OF MEATLOAF, BUT MINE IS VERY SIMILAR TO THIS.. WHEN YOU BAKE MINE YOU CAN SEE THE ONIONS AND BELL PEPPERS IN THE MEAT FROM THE SIDE..

Directions
  1. Preheat oven to 350 degrees
  2. In a small bowl, combine the ketchup, brown sugar
  3. In a separate large bowl, combine the ground chuck , bread, onions, bell pepper, eggs, worcestershire sauce, seasonings and 1/3 of the ketchup mixture from the small bowl.
  4. Mix this well and place in your meatloaf pan
  5. Bake at 350 degrees for 1 hour, drain any excess fat, coat with remaining ketchup mixture and bake for 10 more minutes.

A good meatloaf is sure comfy food! A trick I have learned over the years...you can choose to saute your finely diced veggies before mixing them in the meat to get a less crunchy texture...just an idea.
