Tomato Feta Foil Baked Shrimp Recipe
Fabulous way to cook shrimp. I always triple this recipe because it is so popular. Enjoy.

Ingredients
  • 2 plum tomatoes halved seeded and thinly sliced
  • 1 clove garlic minced
  • 2 tablespoons minced green onion
  • 1 tablespoon minced fresh dill
  • 6 jumbo shrimp peeled but tail left on
  • 1 tablespoon olive oil
  • 2 ounces feta cheese

Directions
  1. Prepare a medium hot charcoal fire or preheat a gas grill.
  2. On a large sheet of heavy duty aluminum foil arrange the tomato slices in the center partly overlapping.
  3. Season with salt and pepper.
  4. Sprinkle with garlic, half the green onion and half the dill.
  5. Top with shrimp and remaining green onion then drizzle shrimp with olive oil and dot surface with lumps of feta.
  6. Bring two sides of the foil up over the shrimp and fold to seal then fold the ends to form a package.
  7. Place package on the grill over direct heat then cover and cook 8 minutes.
  8. Transfer to a dinner plate and unfold.
  9. Garnish with remaining minced dill.

I just made this last night... it was delicious! i loved baking the shrimp and veggies in foil, it's so easy to clean up and really seals in the flavors! thanks for sharing... well done!
