Zucchini Cookies

This a cookie I came up with when I had way to many zucchini, everyone loves them, they brown sugar icing them in.
Ingredients
- 1 cup sugar shopping list
- 1 cup vegetable oil shopping list
- 1 egg shopping list
- 1 teaspoon vanilla shopping list
- 1 c up shredded zucchini shopping list
- 3 cups flour shopping list
- 1 teaspoon baking soda shopping list
- 1 teaspoon cinnamon shopping list
- icing shopping list
- 3 tablespoon margarine shopping list
- 1/2 cup brown sugar shopping list
- 4 teaspoon milk shopping list
- 1 1/2 cup powder sugar shopping list
How to make it
- Mix together sugar and oil, add egg and vanilla. Beating well.Add zucchini and dry ingredients, mix well. Drop by teaspoons onto ungreased baking sheet. Bake at 350 deree for 10-15 minutes till browned. Cool n drizlle with icing.
- Icing
- Heat all ingredients in saucepan, stirring until sugar dissolves. Remove from heat and add powder sugar, Stir until smooth.
- Does not double well
- Freezes well
