Lamb Zucchini Curry Recipe
A staple in our house, equally sumptuous served over rice or with chapati.

Ingredients
  • 2 lbs Lamb or Goat meat ( I prefer goat, available at any mid-eastern meat shop)
  • 2 lbs Zucchini
  • 1 small onion
  • 1-1/2 tsp garlic paste
  • 1 tsp ginger paste
  • 2 medium roma tomatoes
  • 1/4 tsp turmeric
  • 1 tsp salt or to taste
  • 1 tsp red chilli powder
  • 1 tsp coriander powder
  • 1/2 tsp red pepper flakes (optional)
  • 1 tsp garam masala powder
  • 1 tsp cumin seeds
  • 1 tsp black pepper whole
  • 1/4 cup cilantro
  • 2 green cillies deseeded and diced in thin strips
  • 1/3 cup oil
  • 1-1/2 cup water

Directions
  1. Heat oil in a pan or a pressure cooker (if using one). Pop cumin seeds, add onion fry until soft. Add turmeric, garlic paste, fry for 30 seconds. Add salt, then meat, fry until light brown. Add tomatoes and fry for another 6 minutes. Add 1-1/2 cup water and let simmer until the meat is tender (use only 1 cup water if using a pressure cooker, let cook for 10 minutes after the first whistle).
  2. Let the water evaporate completely and add all the dry spices and ginger paste. Fry for another 3-4 minutes. If the meat is too tender take it out in a bowl and just fry the spices in the oil - do not put the meat back yet.
  3. Peel zucchini, cut each in four lengthwise, then cut into very thin about 3 mm slices. Wash and add to the spice (meat - do not add it back if it is too tender and will break) mixture, fry another 5 minutes.
  4. Do not add water, let simmer on medium/ low heat for almost 30 minutes or until zucchini is very tender and lost shape/ dissolved. (Put meat back in at this time, let simmer for 3-4 minutes). Garnsh with red pepper flakes, green chillies and cilantro and serve hot over rice or with chapati.

Alterations


This curry recipe is very versatile and can be used with any type of vegetable i.e. cauliflower, any type of summer squash, even bell peppers. The only thing that will change is the cook time for the vegetable.
