How to make it

  • Heat oil in a pan or a pressure cooker (if using one). Pop cumin seeds, add onion fry until soft. Add turmeric, garlic paste, fry for 30 seconds. Add salt, then meat, fry until light brown. Add tomatoes and fry for another 6 minutes. Add 1-1/2 cup water and let simmer until the meat is tender (use only 1 cup water if using a pressure cooker, let cook for 10 minutes after the first whistle).
  • Let the water evaporate completely and add all the dry spices and ginger paste. Fry for another 3-4 minutes. If the meat is too tender take it out in a bowl and just fry the spices in the oil - do not put the meat back yet.
  • Peel zucchini, cut each in four lengthwise, then cut into very thin about 3 mm slices. Wash and add to the spice (meat - do not add it back if it is too tender and will break) mixture, fry another 5 minutes.
  • Do not add water, let simmer on medium/ low heat for almost 30 minutes or until zucchini is very tender and lost shape/ dissolved. (Put meat back in at this time, let simmer for 3-4 minutes). Garnsh with red pepper flakes, green chillies and cilantro and serve hot over rice or with chapati.

    What cut of lamb would I use, stew meat? I have a hard time finding this. Can I use ground lamb?

    This is another amazing and delicious dish. I love lamb but also love goat...so I'll have to try both version. Another great share - thanks again!
