Roasted tomatoes with garlic and herbs

- 9 large egg tomatoes (810g) shopping list
- 1 teaspoon sea salt shopping list
- 1 teaspoon cracked black pepper shopping list
- 8 sprigs fresh thyme shopping list
- 2 cloves garlic, sliced thinly shopping list
- 1/4 (60mL)cup olive oil shopping list
- 2 teaspoons finely chopped fresh oregano shopping list
- 1 teaspoo finely chopped fresh thyme shopping list
How to make it
- Preheat oven to moderately hot.
- Halve tomatoes; place cut side up in a single layer in a large baking dish. sprinkle tomato with combined salt, pepper, thyme sprigs, garlic and 1 tablespoon of the oil. Roast, uncovered, in a moderately hot oven about 1 hour or until tomato softens and browns lightly.
- Drizzle tomato with combined herbs and remaining oil.
