How to make it

  • Preheat oven to moderately hot.
  • Halve tomatoes; place cut side up in a single layer in a large baking dish. sprinkle tomato with combined salt, pepper, thyme sprigs, garlic and 1 tablespoon of the oil. Roast, uncovered, in a moderately hot oven about 1 hour or until tomato softens and browns lightly.
  • Drizzle tomato with combined herbs and remaining oil.
