Wild rice and Mushroom Burgers with Red pepper Mayo

- 1/3 cup mayo shopping list
- 3 Tablespoons chopped roasted red peppers shopping list
- 2 3/4 cups water shopping list
- 1 large bouillon cube or equivalent for 2 cups water shopping list
- 1 cup uncooked wild rice shopping list
- 2 cups sliced mushrooms shopping list
- 1/4 teaspoon salt shopping list
- 3/4 cup Italian bread crumbs shopping list
- 1 egg shopping list
- 4 slices provolone cheese shopping list
- 4 buns shopping list
How to make it
- Roasted Red pepper mayo
- Combine mayo and peppers, mix well.refrigerate till ready to serve
- Heat Grill (medium heat)
- Burgers
- In medium pan bring water and bouillon to a boil over medium heat,stir to dissolve
- Rinse and drain wild rice with cold water.
- Add rice to pan cover reduce heat to low.
- Cook about 1 hour or until kernals are opened and most or all the liquid is gone.
- Rice should be slightly overcooked. Remove from heat let cool and drain if needed.
- Put rice, mushrooms, and salt in food processor, process until finely chopped.
- Add 1/2 cup bread crumbs, pulse to combine.
- Add egg, pulse to combine
- Shape mixture into 4 patties.
- Sprinkle rest of breadcrumbs on plate, Dip patties into crumbs coat both sides.
- Cook on grill over medium heat, covered about 6 minutes on each side.
- Top each patties with slice of provolone last minute of cooking.
- Put on bun top with red pepper mayo.
