Chicken Vegetable Lo Mein Recipe

Ingredients
  • 6 oz. Udon noodles
  • 2 (4oz.) Chicken breasts cut into strips
  • 1/2tsp crushed Red Pepper
  • 2 cloves Garlic minced
  • 2tsp Sesame Oil
  • 3c sliced Bok Choy
  • 3/4c low-sodium Chicken broth
  • 2Tbsp low-sodium Soy Sauce
  • 1Tbsp Oyster Sauce
  • 1/2c shredded Carrots
  • 1/3c sliced Green Onion
  • 2tsp toasted Sesame seeds

Directions
  1. Cook pasta
  2. Meanwhile, combine Chicken, Red Pepper, and Garlic, tossing well. In a Wok add 1tsp oil. Add Chicken mixture, stir-fry 2 min. Add Bok Choy, stir-fry 2min. Add Broth, Soy Sauce, and Oyster Sauce, stir-fry 1 min. Add Carrot and Green Onion, stri-fry 1 min.
  3. Add Pasta and remaing oil, toss until heated. Sprinkle with Sesame Seeds.
