Gingery Carrots with Raisins

- 1 pound sliced carrots (frozen slices are easy, use fresh if preferred) shopping list
- 1/2 cup golden raisins shopping list
- 1/2 stick butter shopping list
- 1/4 cup honey shopping list
- 1 Tbsp lemon juice shopping list
- 1/2 tsp ground ginger shopping list
- 1/4 cup sliced almonds shopping list
How to make it
- Cook carrots in a covered saucepan in 1/2 inch of boiling water for 8 minutes then drain.
- Combine carrots, raisins, butter, honey, lemon juice and raisins in a 1 1/2 quart baking dish.
- Bake at 375 35 minutes uncovered, stirring a few times.
- Sprinkle with almonds and serve.
