White Potato Pie

WHITE POTATO PIE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Crenshaw Estate in Justin, Texas in 2002.
Ingredients
- 2 potatoes peeled boiled and mashed shopping list
- 2/3 cup butter shopping list
- 1 cup white granulated sugar shopping list
- 1/2 teaspoon baking powder shopping list
- 1/8 teaspoon salt shopping list
- 1/2 cup heavy whipping cream shopping list
- 1/2 cup milk shopping list
- 2 teaspoons lemon zest shopping list
- 2 tablespoons lemon juice shopping list
- 1 teaspoon vanilla extract shopping list
- 4 eggs beaten shopping list
- 2 pie shells shopping list
How to make it
- Preheat oven to 350.
- In a medium bowl mix sugar, baking powder and salt then add potatoes and butter and mix well.
- Gradually add whipping cream and milk and stir until well blended.
- Stir in lemon rind, juice, vanilla and nutmeg then add beaten eggs and mix well.
- Pour mixture into pie shells and put in preheated oven then bake 1 hour.
