  • Mackerels
  • Sprigs of fresh basil
  • ΒΌ c of Taiwanese lettuce or any kind of lettuce
  • 1 small pepper, seeded and sliced
  • 1 200 g pkg of fresh udon
  • 1/4c small cucumber, sliced
  • 10 ounces kimchi, chopped coarse with its juice
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp crushed garlic
  • 1 tsp sesame seeds
  • 1 tbsp vinegar
  • 1 tbsp sugar

Directions
  1. In a 375 degree oven grill mackerel on a rack on top of a foil lined pan. Turn once you notice the oil collecting on the surface of the fish. Set aside when done.
  2. In a mixing bowl, combine the cucumbers, kimchi, soy sauce, sesame oil, garlic, sesame seeds, vinegar, and sugar. Set aside.
  3. Cook udon in salted boiling water and strain.
  4. Bring 3 cups of water to a boil and add seasoning mixture. Add udon, basil, lettuce and jalapenos. Bring to a boil and put in a large bowl. Add grilled fish on top and enjoy!
