How to make it

  • In a 375 degree oven grill mackerel on a rack on top of a foil lined pan. Turn once you notice the oil collecting on the surface of the fish. Set aside when done.
  • In a mixing bowl, combine the cucumbers, kimchi, soy sauce, sesame oil, garlic, sesame seeds, vinegar, and sugar. Set aside.
  • Cook udon in salted boiling water and strain.
  • Bring 3 cups of water to a boil and add seasoning mixture. Add udon, basil, lettuce and jalapenos. Bring to a boil and put in a large bowl. Add grilled fish on top and enjoy!

    Looks nothing like the udon I had when I was living in Japan, but I gave it a go and it sure as hell tasted good!

    Great recipe! If you want the extra fishy taste, add a little dashi broth
