Ingredients

1 bushel carrots

4 lemons

4 lbs sugar

7 tumblers water (a tumbler is about 10 ounces)

Directions

Grate carrots and lemon rind.

Squeeze lemon juice and add water.

Boil all together for 3/4 hour. Then add sugar and boil for a further 20 - 30 minutes or until it sets.

Store as you prefer, in boiling water bath or with paraffin.
