How to make it

  • Grate carrots and lemon rind.
  • Squeeze lemon juice and add water.
  • Boil all together for 3/4 hour. Then add sugar and boil for a further 20 - 30 minutes or until it sets.
  • Store as you prefer, in boiling water bath or with paraffin.

    Good heavens, honey, I hope you use a food processor for all the grating. This sounds wonderful. Carrots are for more than cake, I say. Nice post.
