Ingredients
  • 1 bushel carrots
  • 4 lemons
  • 4 lbs sugar
  • 7 tumblers water (a tumbler is about 10 ounces)

Directions
  1. Grate carrots and lemon rind.
  2. Squeeze lemon juice and add water.
  3. Boil all together for 3/4 hour. Then add sugar and boil for a further 20 - 30 minutes or until it sets.
  4. Store as you prefer, in boiling water bath or with paraffin.

Good heavens, honey, I hope you use a food processor for all the grating. This sounds wonderful. Carrots are for more than cake, I say. Nice post.
