How to make it

  • Preheat oven to 350.
  • Scrub potatoes until very clean.
  • Dry, then using a standard fork poke 8 to 12 deep holes all over the spud so that moisture can escape during cooking.
  • Coat in olive oil and season potatoes with salt, pepper, garlic powder and oregano.
  • Place on a cookie sheet (DO NOT WRAP IN FOIL).
  • Bake in oven for 1 hour and 15 mins or until skin feels crisp but flesh beneath feels soft.
  • Serve by creating a dotted line from end to end with your fork, then crack the spud open by squeezing the ends towards one another. It will pop right open. But watch out, there will be some steam.
  • I like them with some butter and scallions, but you can top them how ever you like.
  • Don't be shy, you can eat the skin, its so good for you, not to mention delicious!

    The potatoes turned out so good. The crisy skin tasted so good we ate the whole potato! Nice because you clean and cut off any inperfections that you dont have to worry about chewing somthing thats not right lol.

    Perfect to go with my whole baked chicken! Got them in the oven cant wait to taste them. opps! as I'm writing this I just relized I forgot to add the oregano! lol
