Summer Sausage

- 2 pounds of (Lean) ground round shopping list
- 1/2 teaspoon garlic salt shopping list
- 1/2 teaspoon onion salt shopping list
- 1/2 teaspoon (crushed) whole peppercorns shopping list
- 1/2 teaspoon mustard seed shopping list
- 5 teaspoons liquid smoke shopping list
- 1 Tablespoon brown sugar shopping list
- 2 Tablespoons Tender Quick Curing salt shopping list
- 1 cup water shopping list
How to make it
- Mix and divide into 3 logs
- Sprinkle with more crushed peppercorns,pat to make stick
- Wrap(I only had some Nylon netting,so I used that)
- Then wrap again in plastic wrap
- Place in refrig. for 24 hours
- Remove plastic wrap
- Place on rack in cookie sheet (to catch any fat)
- Bake at 300degrees
- 1 to 1 and 1/2 hours
- Remove the netting when you can handle,(if you wait until completely cool the netting well stick)
- Wrap in plastic
- Place in Refrig. another 24 Hours before eating.
- Enjoy
