I like to make these and give them with other items in a gift basket.

Ingredients
  • 2 pounds of (Lean) ground round
  • 1/2 teaspoon Garlic Salt
  • 1/2 teaspoon Onion Salt
  • 1/2 teaspoon (crushed) whole peppercorns
  • 1/2 teaspoon mustard seed
  • 5 teaspoons Liquid Smoke
  • 1 Tablespoon Brown Sugar
  • 2 Tablespoons Tender Quick Curing Salt
  • 1 cup water

Directions
  1. Mix and divide into 3 logs
  2. Sprinkle with more crushed peppercorns,pat to make stick
  3. Wrap(I only had some Nylon netting,so I used that)
  4. Then wrap again in plastic wrap
  5. Place in refrig. for 24 hours
  6. Remove plastic wrap
  7. Place on rack in cookie sheet (to catch any fat)
  8. Bake at 300degrees
  9. 1 to 1 and 1/2 hours
  10. Remove the netting when you can handle,(if you wait until completely cool the netting well stick)
  11. Wrap in plastic
  12. Place in Refrig. another 24 Hours before eating.
  13. Enjoy
