Ingredients

How to make it

  • Preheat the oven to 350°F.
  • Sift the flour, corn starch and baking powder and mix together.
  • Blend the margarine, sugar and mango puree together and add the dry mix in 2 parts.
  • Pour in the soy milk and blend together thoroughly.
  • Fold in the nuts and the marachino cherries.
  • The mixture should be quite thick.
  • Grease two 8in cake pans and pour in the cake mixture.
  • Bake for approx 30-40 minutes or until a knife comes out clean.
  • Let cool completely before garnishing or it will ruin the cake.
  • Frost the top of one layer, leaving the outside inch not frosted with the Cool Whip or White Frosting.
  • Place second layer on top and frost the top of that one.
  • Garnish with Pineapple slices in circles using big thicker slices on the outside and smaller thiner slices going in as pictured.
  • Or for a quick treat, just dust with some powdered sugar.
  • Enjoy!

    Well then, there are vegan margarines on the market with out whey or d3. Also if you are going to be picky then make sure your sugar is animal bone free because to be honest, I have never heard of that before (but hey, you learn something new everyday).

    Plenty of great VEGAN white frosting recipes out there. I have a good one I got out of the cupcakes rule the world book, that I will try to post sometime this week. You can use it instead of coolwhip.

    Coolwhip is not vega, .most white sugar you buy at the grocery stores is processed with animal bones and most regular margarine has whey & d3 in it.

    OOh, I'm excited to make this. I'm going to try it this weekend - my in-laws are coming over along with some family from India. Anything mango is sure to impress.

    I love Mango's As a matter of fact, I just ate one about an hour ago (YUMM)...hehehe. Gr8t post and Pic..I will be making this soon for our Singer she is a Vegan and im sure the rest of the band will enjoy it to...And ill get back to you on it. TY.............................Turtle.
