Pineapple-papaya Salsa Recipe
I usually serve this with grilled salmon but it would also work with a grilled chicken breast.

Ingredients
  • 2 medium tomatoes
  • 1 cup diced peeled pineapple
  • 1 cup diced peeled papaya
  • 1/3 cup chopped green onion
  • 3 tbsp. chopped fresh cilantro
  • 1 small jalapeno, minced
  • 1 1/2 tbsp. fresh lemon juice
  • 1/4 tsp. salt

Directions
  1. Blanch tomatoes in saucepan of boiling water 20 seconds.
  2. Transfer to bowl of cold water using slotted spoon. Drain. Peel off the skin . Seed and dice the tomatoes.
  3. Transfer to a large bowl. Add all remaining ingredients and toss gently.
  4. Let salsa stand 3 hours before serving.
  5. Makes about 3 cups.
