How to make it

  • Melt butter over medium heat in heavy frying pan.
  • Blend in brown sugar
  • Add cherry tomatoes and poach in this sauce for about 5 minutes.
  • Be careful not to break the skins.
  • Add rum and basil.
  • Cook an additional 2 to 3 minutes to heat thru
  • Pour all into hot vegetable dish
  • Sprinkle with chopped parsley and serve immediately.
