How to make it

  • In large pan bring 2 qts water to boil; add 1 T salt and cauliflower. Cook uncovered, for 2 min or until tender but not soft. Drain and cool. Put into bowl and add mustard seed, dill weed, chiles, dill seed, and garlic.
  • In small saucepan combine 2 c water, vinegar, sugar, and remaining 2 T salt. Bring to a boil over high heat; pour over cauliflower. Cool slightly, cover, and chill at least 6 hours or as long as 2 weeks. Makes 2 qts.
  • Carrots: follow directions for cauliflower substituting 2 lbs baby carrots. Cook about 7 min or till tender.
  • Green Beans: follow directions for cauliflower substituting 2 lbs green beans. Cook about 5 min till tender but still bright green.
  • This looks really pretty when you layer all three in a glass bowl or even an appropriate vase.
