Hot Vegetable Seafood Noodle Soup

- 8 shallots shopping list
- 4 cloves of garlic shopping list
- 3 slices of fresh root ginger shopping list
- 2-3 teaspoon of black pepper shopping list
- 1 tbs of olive oil shopping list
- 1 packet of soup spices shopping list
- 9 cups of cold water shopping list
- 200g peeled large prawn shopping list
- 200g firm white fish fillets, cut into cubes shopping list
- 100g fresh scallops, slice shopping list
- 100g squid, slice shopping list
- 1 carrot, cut into thin shreds shopping list
- 2 tomatoes, cubes shopping list
- 1 red pepper, slice shopping list
- 1 green pepper, slice shopping list
- 1 cup of shredded cabbage shopping list
- 1 stick celery, slice shopping list
- 500g of egg noodles shopping list
- (soup spices can be make by putting in 3cm cinnamon, 1 star anise, 2 cardamon pods, 2 cloves, 1 teaspoon of coriander, 1 teaspoon of aniseed on a clean thin muslin and tied with a string) shopping list
How to make it
- Blend the shallots, garlic, fresh root ginger and black pepper to a fine mixture.
- Heat oil in a large saucepan and fry in the blended mixture until fragrant.
- Add water and soup spices. Simmer for 10 minutes.
- Add in seafoods and simmer for 5 minutes.
- Finally add in vegetables and simmer for another 5 minutes.
- Discard the soup spices.
- In another large saucepan, bring water to a boil. Add noodles and bring to a boil until the noodles are tender. Drain well and tip into a warm serving bowl.
- To serve, put some noodles into a bowl and pour some of the vegetable seafood soup.
